Whole Grain Peanut Butter Bars
While our kitchen garden isn’t quite big enough for growing grain, I still love to use it as much as I can when baking. I first began milling my own grain five years ago, and the contraption that sits on my counter and does this grinding is called a Whisper Mill. But, to be honest, there’s nothing “whispery” about it. The sound is equivalent to that of a small lumber mill running in your kitchen, but it surely does get the job done in no-time-flat. There’s something rewarding in watching grain turn into flour before your very eyes (my youngest child is obsessed with watching the grain go through the hopper… the hoppa!), and the breads that are created with this freshly milled flour are pretty amazing.
My friend Gayla, who graciously taught me how to make bread, rolls, and tortillas, (and has been a beacon of wisdom for parenting advice) also passed down this recipe full of peanut buttery goodness and sprinkled with chocolate chips. What’s not to love when both peanut butter and chocolate are involved, and it’s whole grain?? Let’s just call it health food and eat the whole pan!
Why whole grain?
While eating the entire pan of these whole grain peanut butter bars may not be the greatest idea, there’s still loads of health benefits to eating whole grains (fiber, anyone??), and even those with gluten intolerances could try this recipe with gluten-free grains. I typically use How to Grow a Vegetable Garden Series later this week. Enjoy!
