I love potatoes; in fact, I think they’re one of the best foods the Lord saw fit to put on the earth. Think of all the ways you can eat them! Fried, steamed, mashed, roasted, baked… the list goes on!

What are baby potatoes?

One of the best parts about growing at home or simply visiting the farmers market in early spring is the baby potatoes. These are potatoes that are not yet fully developed and may also be called new potatoes. 

These small potatoes are incredibly crisp when dug up and range from the size of a large grape to a golf ball. My grandparents would always harvest baby potatoes, allowing the rest of the potatoes to keep growing, and serve them boiled with a white sauce on top. So delicious. Since baby potatoes aren’t fully developed, there’s no need to peel them since they have thin skin. 

While many baby potato recipes call for yukon gold, there are many other varieties that could be used including red potatoes, purple potatoes, or creamer potatoes. 

It may take more of these little potatoes to make a full side dish, but it’s definitely worth it, and many grocery stores realize the value of selling them for whatever baby potatoes recipe you may have on the meal plan that week.
