Best Easy Ground Beef and Cabbage Soup

This hearty beef and cabbage soup, or hamburger cabbage soup as some call it, warms you up and comes together in less than 30 minutes! I’ve got an easy recipe for you that uses ingredients that are easy to come by and this easy beef cabbage soup recipe will be sure to please everyone in the family!

This recipe was passed down to me from my sweet mother in law, and it is my husband’s favorite soup, and he doesn’t usually like soup. To me, it is similar to cabbage rolls in ingredients, but is so much less time consuming since it can be whipped up in 30 minutes. Here’s what you’ll need to make this delicious beef soup at home whether it’s one of those busy weeknights or a slow Sunday afternoon.

Ingredients for Beef and Cabbage Soup

Here’s what you’ll need to make this tasty beef cabbage soup:

  • 2 lbs lean ground beef
  • 1-2 Tbsp olive oil or avocado oil
  • 3 cloves garlic
  • 1 onion, chopped
  • 2 qts beef broth or beef stock
  • 1 small head of fresh cabbage, chopped (learn How to Grow Cabbage at Home here.)
  • 2 14.5 oz cans diced tomatoes (I like the fire roasted variety), undrained
  • 2 Tbsp Worcestershire sauce
  • Salt
  • Black Pepper

Here are the supplies you’ll need to make this flavorful soup at home:

  • Large stock or soup pot (I use an enameled dutch oven)
  • Cutting board
  • Sharp Knife
  • Garlic press (optional)
  • Colander

How to make Cabbage Beef Soup

  1. Heat large pot over medium high heat and add ground beef. Stir occasionally, breaking up meat and cooking until done. Season with salt and pepper. 
  2. Drain meat in colander and set aside. 
  3. In soup pot, add in 1-2 tbsp of olive oil and add in chopped onions. Saute onion 3-5 minutes until tender. Add chopped or pressed garlic and cook for one minute. 
  4. Add in beef broth, scraping any bits off of the bottom of the pot. Add in beef, canned tomatoes, and Worcestershire sauce. Bring to boil. 
  5. Add in chopped cabbage and stir to combine. Reduce heat to simmer and allows to cook for 15 to 20 minutes until cabbage is tender. 
  6. Add more salt and pepper to taste.

Instant Pot and Slow Cooker Variations

Looking for a more hands-off hearty cabbage soup recipe? This recipe can be modified to be prepared in the Instant Pot and the slow cooker. Here are the modifications. 

  • For the Instant Pot, brown beef using the saute function. Drain beef and set aside. Saute onion as directed above and add in garlic for the last minute. Turn off saute function and add in the rest of the ingredients. Stir well. Put lid on Instant Pot and lock into place. Set manual timer for 15 minutes. Do a quick release and adjust salt and pepper as needed. 
  • For the slow cooker, brown beef and drain. in the slow cooker, add beef and the rest of the ingredients in the order listed. Set slow cooker on high for 3 hours or low for 6 hours. 

I love the flexibility of having different ways to make this soup in case I don’t have the extra time to stand over the pot. 

Beef and Cabbage Soup Variations

Don’t have all of the ingredients on hand or just want to mix things up a bit? Here are some recipe variations you can implement:

  • Swap out one can of the diced tomatoes for Rotel tomatoes to add a bit of heat to the soup.
  • Swap out the garlic and use a teaspoon garlic powder instead. 
  • Add in a tablespoon of tomato paste for a more tomato based soup. 
  • Use small tender chunks of beef instead of ground for more a beef stew vibe, but increase cooking time to 30 minutes. 
  • Substitute chicken broth or vegetable broth if you don’t have beef on hand, or use any bone broths in place of the beef stock.
  • Add in fresh herbs, such as thyme or bay leaves, for an earthy addition to this delicious recipe. 
  • Add in a can of kidney beans for a hearty soup with more fiber

How to Store Cabbage Beef Soup

Have more soup than you can eat in a sitting? No worries! I always make more soup than we need because my family loves eating this for lunches during the week. Here’s how to store this soup:

  • Store leftovers in an airtight container in the fridge for up to 5 days. 
  • Freeze personal sized portions of this soup for easy dinners by placing in airtight plastic containers and freezing. Thaw out your soup by microwaving or warming up on the stove. The texture of the cabbage may not be the same, but it’s a great option for freezer meals.
